Our Managers are responsible for all aspects of managing the restaurant. We are looking for someone who will constantly challenge the current operation, who researches new opportunities to increase revenue and profitability in their business, driving the growth and awareness of the Ping Pong brand.
Our Managers have overall responsibility for ensuring the restaurant is operated and maintained to maximise profitability while ensuring that company standards, policies and procedures are maintained.
Key Skills Required
• Monitor the quality of food and service to make sure they are in accordance with company standards. Manage the security of cash, product and equipment while on shift and report any problems to a senior Manager on handover.
• Ensure the restaurant is run to the company and legal standards in regards to Hygiene, Health and Safety, and Licensing, including conducting daily free-pour tests with all staff and conducting regular kitchen audits.
• Manage cost of labour and wastage. Conducting weekly labour forecasts to effectively manage trade.
• Build & Implement a Local Business Marketing Plan for the restaurant which demonstrates ROI.
Essential Requirements:
• At least 3 years’ experience at Manager level or similar sales / site target.
• Excellent communication skills.
• A brand ambassador that embodies our Ping Pong personality, who lives and breathes our values.
• Inspirational leader with strong people engagement skills.
• Customer centric.
• Experience of delivering like for like, year on year sales growth and driving sales during challenging trading times..
Desirable Requirements
• Experience as Manager of same level or similar, in a branded, high quality food offering, restaurant environment, operating a city centre high footfall location.
• Experience of restaurant Management operations in a European city or for a European company.
Working Pattern
5 out of 7 days a week including public and bank holidays and weekends, some double shifts.

• Ensure that the glass washer is working correctly, that the levels of detergent and ‘auto rinse’ are correct and that the filters are kept clean.
• Ensure that back-bar bottles and glasses on display look presentable in straight lines and that the warmer glasses go to the back.

Key Skills Required
• You are the hands-on person in our kitchens, ensuring our chefs have everything they need to prep, plate and pass our fabulous food on to the floor team, and out to our customers.
• You will ensure that the dish washing area is always clean, that the pots, pans and dishes are cleaned regularly throughout service and stored correctly in the right place and in a neat order.
• You will ensure that the cloths are always clean, if they are wet; dry it out-of-sight of customers.
• You will ensure that the dishwasher is working correctly at the required temperature, with correct levels of detergent and that the filters and inside are kept clean.
